- Greek yogurt(2 tbsp)
- Fresh dill(2 tbsp)
- Flat Leaf Parsley(2 tbsp)
- Lemon(1)
- Olive oil(1 tbsp)
- Salt(½ tsp)
- Black pepper(¼ tsp)
- Flatbread(2)
- Cucumber(1)
- Tomato(2)
- Arugula(60 g)

Finely chop {Fresh dill} and {Fresh parsley}. Zest and juice half of {Lemon}, then slice the remaining half into wedges. Dice {Cucumber} and {Tomato}.

In a bowl, mix {Cottage Cheese}, {Greek yogurt}, chopped herbs, lemon zest, {Olive oil}, {Salt}, {Black pepper}, and 1 tbsp lemon juice until creamy but still textured.

Warm {Flatbread} in a dry pan for 1–2 minutes per side until soft and lightly toasted.

Spread the herby cottage cheese thickly over each warm flatbread. Top with {Arugula}, {Cucumber}, and {Tomato}, then finish with a squeeze from the lemon wedges.
